A Family Tradition

Herrcastle Farm is located in rural southern Lancaster County, PA and has been owned and operated by Ed and Judy Herrmann since 1985. The farm started out in the hog business and in 1994 moved into vegetable and fruit production. In 2006, the Herrmann's son, Matt, became involved in the daily operation, allowing the farm to grow into the future.

Meet the Team

  • Ed Herrmann

    After leaving the Navy, Ed went to Delaware Valley College and majored in animal husbandry. After college he met his wife, Judy and started buying hogs for Smithfield. This led them to Lancaster County where they decided to purchase a farm. Ed started out with a 100 sow breeding operation, while growing tomatoes, peppers and eggplant. A few years later he planted his first orchard. After the market collapse for small hog farms in the late 1990’s he exited the hog business and went full time into fruit and produce.

    Today, he is semi retired, but he still loves to manage the production of the fruit on the farm.

  • Judy Herrmann

    Judy started her love of gardening as a young child growing up at her grandparents farm in rural bucks county, PA.

    Judy is also credited for naming the farm. She combined Herrmann and her maiden name of Cassel together to form Herr-Cassel, later changed to Herrcastle.

    When Ed and Judy moved to Lancaster county, Judy planted a small garden and sold the very first vegetables from Herrcastle Farm in front of their home at a roadside stand. A few years went by and Judy decided to sell at a local farmers market in Quarryville PA. That decision led to many opportunity's to grow the business and shape it to where it is today.

    Today, Judy mainly handles the book keeping. Occasionally she will help pick the raspberries and cherry tomatoes. When not working, she loves to cook meals and bake pies for her family (Matt says she makes the best cherry pie!!)

  • Matt Herrmann

    Matt is the second generation of Herrcastle farm, and the son of Ed and Judy.

    Growing up matt would help out with the vegetables, chickens and sometimes the pigs, and also help sell at the markets. After going to college for construction, the housing market collapsed and forced him to come back to the family farm. Since then he has taken on growing and sustaining the farm into the future.

    Matt runs the daily farm operations, from ordering seed to planting and harvesting, and shipping and receiving.

  • Katlyn

    Katlyn was born and raised in New Jersey, she met Matt in May of 2022. She originally worked in the autobody field as a shop and parts manager.

    After moving to Herrcastle Farm in January of 2023 she took on the roll as HR director, and social media specialist, so everything you see on Facebook or Instagram is all from her. She also helps run the daily operations of the farm as well as the markets, and is Matts extra right hand.

    We at Herrcastle Farm are lucky to have Katlyn to help grow the farm into the future with Matt.

  • Kim

    Kim started working for Herrcastle Farm in 2013 packing and prepping our fruit and vegetables for our markets and CSA.

    Kim was born in PA, but lived all over the east coast, she is a very talented children’s book illustrator with many awards. Kim and her husband Barry raised 3 kids in Lancaster county, two of which have worked for Herrcastle Farm. While her kids were growing up, they had a large garden, which is why she loves working for Herrcastle Farm.

    If you buy our produce at our markets or belong to our CSA, Kim makes sure everything is as fresh as can be. Herrcastle Farm couldn’t be where we are today without her.
